A recipe that’s ready to go in the oven in just a few minutes, perfect for smoothing out a sour cooking! This time I present to you a version with pistachio and white chocolate chips for a very retro moment. With a pinch of salt and a whole pistachio powder, I find them irresistible…
Recipe for ten cookies:
- 115 g semi salted butter
- 160g white sugar
- 60 gm pistachio powder
- 200 grams of flour
- 1 egg (50g without shell)
- 1 teaspoon liquid vanilla extract
- 90 gm roasted unsalted pistachios
- 100 gm white chocolate chips
Put the butter, sugar and pistachio powder in a bowl.
Mix well to get a kind of cream. Add eggs and vanilla.
Mix and then add the flour.
Little bit of mixture and finish roasted unsalted pistachios (otherwise you can pass raw pistachios for 16 minutes at 165°C over a variable heat) and white chocolate chips.
Mix one and you’re done! I assure that I do not use yeast or leavening agent.
Form it in the form of flat balls, the size of 75 grams. I baked them on a silicone baking mat, but regular good quality parchment paper will do.
Bake for 12 minutes at 165°C in a preheated, fan-supported oven.
Let it cool before taking off. Enjoy warm or at room temperature!
