Lemon, olive oil and toasted almond biscuits

Great cookies with a refreshing and wonderful lemon flavor. I also add a little olive oil and roasted almond powder. The result is very tasty and you will be delighted! As usual with these cakes, they’ll be ready in no time and will keep for at least a week in the fridge, well wrapped.

Recipe for 10 cookies

  • 75gm ground almonds
  • 75gm unsalted butter
  • 30 grams olive oil
  • 160 grams sugar
  • Great organic lemon flavor
  • 200 grams of flour
  • 1 egg (50g without shell)
  • 160 gm white chocolate

Put the ground almonds in a baking dish, preferably on parchment paper.

Cook for 8-10 minutes (adapted while observing) at 180 ° C. The powder should be golden in color.

Put the butter, olive oil and sugar in a bowl. If you have a robot, take the paper.

Also add the great organic lemon zest.

Mix well until everything becomes homogeneous. Add the egg.

Then add the flour and the cooled almond powder.

Mix and finish with white chocolate chips.

Make flat balls weighing 75 g and arrange them on parchment paper.

Bake for 12 minutes in a preheated oven at 165°C on rotating heat.

Let it cool before it devours!
