March-April 2022 Workshops! – Bernard’s Kitchen

I offer cooking classes here in my workshop in Porte des Lilas! Feel free to contact me for any request for private lessons, business board lessons or to rent a place to do your own lessons.

Saturday, March 12 at 2 p.m.: This pastry class will allow you to make delicious almond and hazelnut dough, then master the art of sinking into amazing cakes worthy of a pro. We make the sweet dough by sandblasting, then everyone makes 6 small cakes and leave with them. In the program are three different tartlets: lemon meringue tartlet, chocolate, praline and cocoa nibs tartlets and walnuts. We will do it on chocolate, lacquer that gives an incredible visual result. Register here!

Sunday, March 13th at 2:00 pm: Vietnamese Cuisine. In this course, we will see together four dishes of Vietnamese cuisine. First of all, the famous Banh Cons, this delicious rice and tapioca dumplings stuffed with pork and mushrooms. Then Banh Coots, mini dumplings with coconut milk and rice flour, topped with shrimp and pork. We’ll cook an irresistible dish of pork with lemongrass and end the season with a dish that’s explosive in flavors and textures, crunchy beef with spicy sauce. Register here!

Saturday March 26 at 2 PM: Thai Cuisine 1! Afternoon in the kitchen to discover the main ingredients of Thai cuisine. We will make green curry paste together from the freshest ingredients. Then you’ll make green curry with Thai chicken and eggplant, irresistible chicken with cashews and see how to make tom kah gai, the famous coconut milk soup. Register here!

Saturday 9 and Sunday 10 April: Atelier Folie Chocolat! This two-day course is unique in France. We’ll actually see production from pill to tablet. Dark chocolate, milk chocolate, and white chocolate will be made directly and directly together. We will be making Nutella, a homemade praline, but we will also learn more about cocoa butter and its smoothing. We will start this Saturday morning course on hot chocolate and learn all the secrets of chocolate: roasting, crushing, winnowing, heating … My book “Make Homemade Chocolate” published by Solar, prepared by Christophe Michalak, will also be available to you. Saturday, April 16 at 2 p.m.: Chinese cuisine. During this 4 hour class, we’ll take the time to prepare our delicious Bikini Ravioli, which is absolutely irresistible. Folding will be explained in detail. Then we make yipin noodles with Sichuan pepper. We’ll end with a chicken with almonds and vegetables. You will leave with all your achievements which will be enough for a meal for two! Register here!

Sunday, April 17 at 2pm: Upside-Down Pancake Workshop! In this course, each of us will make inverted puff pastry according to the rules of art, using a simple technique and butter that can be easily found on the market. Everyone will then make their own spiral tarte. Then we make a filet that will be immediately tasted.
